Ingredients • 4 large potatoes 2 tbsp olive oil • Generous amount of sea salt & freshly cracked black pepper • 1/2 tsp smoked paprika • 1/2 tsp garlic powder • 1/2 tsp onion powder • 1/2 tsp oregano • 1/2 tsp dried rosemary • Fresh parsley to serve • Method: • 1. Preheat your oven to 200°C fan forced. Peel your potatoes, then slice off the tops and bottoms followed by the sides to create flat edges. Slice down lengthways to create 3 even thick pieces. • 2. Place between a pair of wooden chopsticks and slice vertically. Flip then slice diagonally. Repeat with all the potato slices then place onto a lined baking tray. • 3. In a small bowl, mix together the olive oil, salt, pepper, paprika, garlic powder, onion powder, oregano and rosemary. 4. Brush oil mixture over the potatoe
