You can use any kind of chicken pieces you like, with bone or boneless. I baked my dish in a non stick 14 inch pot. You can use any short pasta of your choice, you can even break apart spaghetti or capellini too. 

Ingredients:
•1/4 cup oil 
•1 pound (454 grams) fideo @barillaus 
•3.5 cups chicken stock or 3.5 cups hot water mixed with 2 tbsp. Consommé 

Directions:
1. Hear your oil in your pot. 
2. Add the package of noodles and mix. 
3. Continue toasting your noodles till golden for about 2 minutes on medium heat. 
4. Once toasted, add your liquid on top. 
5. Mix and bring the a boil. 
6. Cover pot, turn off stove and let it settle for 5 minutes. 
If you prefer your pasta softer, not so al dente then give it some more time. You can also simmer for an additional 5 minutes. 
7. Fluff up your noodles and enjoy 🤍

A few tips before beginning: 
I made two batches of rice, one was Jasmin rice the other was a rice pilaf (uncle Ben’s). I ended up using the pilaf one cause they were more separate. For best results cook rice at a one-to-one ratio.
You can control the amount of heat you like, so if you have little ones, put less chili paste. Nut allergies? skip the peanuts, you can add toasted sesame seeds instead. 

Ingredients for crispy rice: 
•2 cups of white raw rice cooked and cooled 
•1 heaping tbsp. chili paste 
•3 tbsp. Oil 
Ingredients for salad:
•4 Persian cucumbers 
•1/2 bunch fresh mint 
•1/2 bunch fresh cilantro 
•about 5 scallions 
•1 cup shelled edamame 
•1 avocado 
Ingredients for dressing:
•1/4 cup soy sauce
