I shortcut this recipe by using shelf stable pantry items because even if your kimchi jjigae isn’t perfectly authentic it’ll probably still be tasty 😌

For an individual serving (as shown):
- Add 3/4 cup ripe (sour) kimchi to a small pot with 1/4 of a sliced onion, 1 tsp gochugaru, 1 tsp gochujang, and 1/4 tsp dashi powder. Fill with water until just covered and bring to a boil. Turn heat down to a simmer, add the lid, and cook for 15 minutes.
- Add half a can of tuna and half a box of tofu (or go with all tofu/all tuna if you’d like), add the lid, and simmer for another 10-15 minutes.
- Enjoy with hot rice.

(Thanks @jennjlee_ for being my kimchi jjigae plug for so many years 🫶)
