Sprinkle with dry rub (salt, Korean red pepper powder or flakes, white pepper, & five-spice powder), then brush with sauce (brown sugar, oyster sauce, hoisin sauce, honey, soy sauce, salt, rice vinegar, Shaoxing wine, grated ginger, grated garlic, & five-spice powder).
