Chef Ahmed on Instagram: "Classic French onion soup for our fall and winter soup series 🧅 🍜 Ingredients o 8 large onions, thinly sliced o 3 tablespoons butter o 1 tablespoon avocado oil o 1 teaspoon sugar o 2 cloves garlic, minced o ¼ cup white cooking wine (optional) o 1 head of garlic (optional) o 8 cups beef stock o 3 bay leaf o 3 stems of fresh thyme (with leaves) o Salt and pepper to taste o Baguette slices o Gruyere or Swiss cheese, freshly grated · Directions o Add oil and butter to a hot pan. o Once butter is melted, add thinly sliced onions and sauté until caramelized, which may take anywhere between 30 – 45 minutes. o Right before the onions are done, add sugar then sauté for another 1-2 minutes. o Add garlic, bay leaf, and thyme, then sauté until fragrant, fo
BORED OF LUNCH on Instagram: "Slowcooker French Onion Soup 🥣 🥖 🧀 What’s better than a rich brothy soup with crusty cheesy bread on top? This is the laziest version possible so I apologise to the French nation. - 10-15 onions sliced (roughly 1.5kg) - 100g butter - 1 tsp Italian herbs - Fresh thyme or any other herb - 900ml of beef stock - 200ml white wine - 1 bay leaf - Salt and pepper - 2-3 garlic cloves - 2 tbsp brown sugar - 1 tbsp Worcestershire sauce - 2 handfuls of cheese - 6 slices of bread 1. Slice all the onions up, you will cry 2. Add all ingredients to the slowcooker except the stock, cheese and bread, 8-10 hours on high. You can speed this up by softening them briefly on a pan 3. Add in the stock, top with bread and cheese then under the grill for 8 mins. Butter
