By now you know I love a good fusion pasta and this one won’t disappoint - it’s a riff on a classic vodka pasta with a fiery twist courtesy gochujang, the fermented Korean red pepper paste that can enliven just about anything!

Cook your pasta of choice until just shy of al dente. Drain and set aside, reserving the pasta water. 

Heat a generous knob of butter/ splash of olive oil. Now add: 
- 1/2 onion, finely diced
- 2-4 cloves of minced garlic
- Handful of spring onions
- 2-3 tsp chilli flakes/ gochugaru. 
Sauté until fragrant.

Stir in 2-3 tbsp of gochujang , cooking for a few minutes until deeper in flavour and caramelised. 

Add 3 tbsp vodka (alternatively add pasta Pasta Favors, Ayushi Gupta, Fusion Pasta, Red Pepper Paste, Vodka Pasta, Pepper Paste, Pasta Water, Quick Dinners, Spring Onions

Vegan beef-style pieces 
1 block extra firm tofu 
2 tbsp corn starch 
1/2 tsp liquid smoke
1 tbsp gravy granules (+some hot water to dissolve)
1 tsp onion powder
1 tsp garlic powder 
1-2 tbsp dark soy sauce (for colour) 

Drunken pasta 
2 servings pappardelle 
2 tbsp neutral oil
2 cloves garlic 
1-2 red chillies
2 shallots 
1.5 tbsp light soy sauce 
1-2 tbsp dark soy sauce 
2 tsp vegan fish sauce 
1 tsp sweetener
2 stalks spring onions 
Splash of pasta water
