This method of making mash potato is my favourite it follows the classic Joel Robuchon method which is never a bad thing… intensely flavoured and super smooth. Some people like lumpy mash, I do not. 800g Maris piper potato or anything floury 200g salted butter 150ml whole milk (add more if you like it wetter) Salt to taste 1. Bake the potatoes at 180c for approx 1 hour. 2. Pass the potatoes through a ricer keeping hold of the skins to cook up as a snack 3. Pass through a sieve if you want it extra smooth and while it’s still hot get it into a pan on a low heat 4. Incorporate the cold butter a bit at a time then add the milk beat it through 5.
