Capirotada | Mexican Bread Pudding
Capirotada, also known as 'capirotada de vigilia' (Lent capirotada) is a traditional Mexican bread pudding served during Lent, particularly on Good Friday. The dish features layers of nuts, cheese, dried fruit, and bread drizzled with cinnamon-infused sugar syrup. Every ingredient has a special meaning relating to the agony and suffering of Christ on the cross: bread represents the body of Christ; syrup, his blood; cloves, the nails; cinammon, the wooden cross; and melted cheese, the shroud.

To celebrate Easter, one of the traditional dishes that my great grandmother Doña Carlotita, or how we used to call her: "La Mamá Grande", used to cook for us was the Capirotada Sonorense: a simple, yet flavorful dish with day-old bolillo bread fried in shortening, peanuts and Manchego cheese.
