A one-pan dish I can get behind! The tortellini is cooked to start with so not entirely a one-pot meal but so so easy. The longest step is just cooking down the tomatoes and that takes about ten minutes max! I liked it with a cheese tortellini but veggie filled or meat filled would be great too!
