I have also been asked by many whether this recipe can be converted to Yudane Method. I don't encourage using Yudane Method for sweet potato bread it is because it will make the texture too moist. Potato starch also absorbs more water than wheat starch and this makes the bread texture more moist and have better shelf live. So, it does not need yudane dough. This is the same dough recipe I posted for my mince and potato flatbreads. A fabulously versatile soft dough that can transform into these wonderful potato buns as well as pizza, flatbreads you name it! Give it a try whenever you have any leftover mash! 

Potato dough - makes 10 burger size buns
600g bread flour 
7g instant yeast
10g brown sugar
10g salt
25g full cream milk powder
50g brown butter (melt butter in pan till brown and nutty)
375ml lukewarm water
200g mashed potato

Stir yeast into the water with the brown sugar and leave 15 minutes till activated and foamy. Add flour, milk powder, salt, mashed potato & brown butter to stand mixer and start mixing.
