How to make perfect scrambled eggs, according to an expert.
Taste.com.au’s Food Director Michelle Southan says: “Moist, soft, cloud-like folds of creamy egg is the result you’re aiming for.” Before you start cooking, you need the right ratio of milk or cream to egg because cooked egg only holds a certain amount of liquid. You must measure the amount of liquid carefully. “Too much will cause the egg to ‘weep’ moisture,” says Michelle. Using the ratio of 2 tsp of liquid for each egg prevents your scrambled eggs oozing out excess moisture.

Boiled egg mayonnaise
This boiled egg mayonnaise is delicious served on sandwiches with chicken and lettuce, spread on the outside of bread, instead of butter, for grilled cheese sandwiches, or even added to mashed potato for a new twist. With just 3 other ingredients, turn them into a smooth and creamy mayonnaise. The lemon juice and mustard add tang and balance out the eggy flavour.
Microwave poached egg
If you’re looking for a shortcut to poached eggs, then use your microwave! It’s as easy as cracking an egg into a microwave-safe glass. Before you microwave, be sure to prick the yolk to prevent it from bursting. Microwaves can vary in power and wattage, so microwave for 1 minute and, if the egg is still not cooked to your liking, microwave in 30-second bursts until it is cooked. Be sure to drain the egg on paper towel before serving.

Air fryer poached eggs
Many families now have air fryers sitting proudly on the kitchen bench for heating up snacks and cooking dinner, but did you know you could also poach your eggs in it? Doing multiple cafe-style poached eggs at home can be challenging. Using your air fryer gives you the perfect poached eggs, allowing you to cook at least 4 eggs at once. I tested this recipe with 3 dozen eggs at different temperatures and cooking times and I found this recipe provided me with the best results.

Tuscan feta fried eggs
We took the viral feta fried eggs to another level by adding some of our favourite Tuscan flavours. The feta is dolloped with sun-dried tomato pesto and the centre is filled with silky wilted spinach. The great thing about this is the feta turns nice and crispy on the bottom and adds so much flavour to fried eggs. It’s the perfect way to start the day or for a lazy weekend brunch with friends.
