Here is the written recipe from our friend Nancy. Olive oil in pan. Salt & pepper your chicken. Place chicken in pan. Salt & pepper the other side. Cook for 6 minutes. Flip chicken. Cook second side for 6 minutes. Remove chicken and put on a plate. In the same pan add balsamic. (Probably about 1/4 cup) Add diced garlic (probably two cloves) Add cherry tomatoes and season with salt. Simmer for 5 minutes. Add shredded basil (likely 1/4 to 1/2 cup) and return chicken to pan. Put sliced fresh mozzarella on top of chicken. Cover and sauté for probably another five-seven minutes. Spoon the tomato mixture on top. Serve and enjoy.
