INGREDIENTS:
- 2 cups all-purpose flour
- 1/2 tsp salt
- 1/2 cup boiled water
- 1/4 cup room temperature water
- Additional flour for dusting
- 3 tbsp oil for cooking

Roux:
1/2 cup all-purpose flour
1 tsp salt
1/2 tsp Chinese five-spice powder
1/2 cup neutral oil

Dipping Sauce:
1 tbsp light soy sauce
1 tsp Chinese black vinegar
1 tbsp chili oil (optional)
Scallions

Slowly mix in water then bring together with your hands. Turn onto a work surface and knead until smooth and elastic, about 10 minutes. Cover with cling wrap and rest for 30 minutes.
