Welsh onion cake, I prefer to put the cake into a pyrex or other microwaveable & Oven proof dish rather than in a pan. Then blast on full power to cook the potatoes through before putting in the oven for 20 minutes. Because if you cut the potatoes just even slightly to thick they can be not cooked through enough.

Leek & Caerphilly crumble tart I made this with Wensleydale as couldn't find caerphilly. Very nice. I made it in a 25.5 cm tin. Mixture came to top of pastry case. Too much topping! Probably cut quantity in half. But will definitely make again - very popular with everyone who ate it!

Bara brith recipe

Bara Brith translates to ‘speckled bread’ (in Welsh) and is a rich fruit loaf made with tea. Produced all over Wales the spiced fruit loaf is delicious when spread with salted Welsh butter. It can be either a yeast bread enriched with dried fruit (similar to the Irish barmbrack) or something more like a fruitcake made with self-raising flour (no yeast). It is traditionally made with raisins, currants and candied peel.
