In 2374, the dish was the main course Vic Fontaine was preparing to serve Odo and Kira Nerys on their first date in one of Quark's holosuites (preceded by a Caesar salad and followed by cherries jubilee). (DS9: "His Way")
The Star Trek Encyclopedia, 4th ed., vol. 1, p. 135 described chateaubriand as an "aged tenderloin beef roast, served cooked."
