Cilantro is one of the few cooling pungent spices that stimulate digestion and reduce inflammation, thus reducing Pitta. Cilantro has a sweet "vipak" and thus is nourishing. Use fresh ginger.

Mint Rice: this recipe is a keeper. I omit chilies and coconut, and sub ghee with grapeseed oil. It's delicious, absolutely fragrant and tasty on its own. And it really helps with stomach discomfort. Wifey loves it too :)

This bowl looks fancy as all get-out, but hello! It only takes 30 minutes to make, and it's gilded with a spectacularly easy sauce of tahini and golden turmeric. Here we're using roasted eggplant that's been tossed with za'atar, a Middle Eastern spice blend made with sumac, thyme, and sesame. If you don't have eggplant on hand, you could use cauliflower, sweet potato, beets, or Brussels sprouts instead as the hearty veggie component.
