So I finally got around to trying the viral egg wrap trend from last year....⁠

The verdict? It was DELICIOUS, plus it’s a super easy and quick lunch. ⁠

I was hesitant to try it as a lot of the comments on this trend mentioned that theirs stuck to the pan – and ours did (a little) but it still worked! ⁠

I used the wraps I had on hand (gluten-free sweet potato wraps) but it would have been crispier with regular tortillas!⁠
