Flaky, crispy and tender, this baklava has layers of buttery pastry with crushed biscoff biscuits and nuts soaked in a delicious honey syrup. It’s perfectly sweet with just the right amount of spice, and the best part is , it’s super simple to make.

40 sheets of ready rolled filo pastry sheets 
200g unsalted butter, melted (dairy free or dairy) 
200g crushed mixed nuts (pistachios, almonds, walnuts, pecans) 
200g crushed biscoff biscuits 
2 tsp cinnamon 

Syrup 
200 g granulated sugar
2 Tbsp lemon juice 
180ml water 
170ml honey or syrup (maple or agave) 

++ Melted biscoff spread and crushed biscuits/nuts for serving 

Start by making the syrup.

Syrup
❤️ 140 mL water
❤️ 115g caster sugar
❤️ 135g honey
❤️ 1 Tbsp lemon juice

Baklava
❤️ 40 sheets filo pastry (9x9 size)
❤️ 280g salted butter, melted
❤️ 320g biscoff spread @biscoffuk
❤️ 150g biscoff crumbs
❤️ 250g pecans, finely chopped

1.Make the syrup first to ensure it is cool when making the baklava. Add all ingredients to a saucepan and bring to the boil. Then reduce heat to low and simmer for 6 minutes. Remove from heat and let it cool, refrigerate.
