It is a great alternative, if you are looking to try a different dosa sometimes that the traditional dosa made with rice and urad dal. Ingredients -  1 cup quinoa 1/2 cup oats 1/4 cup chana dal 1/2 cup urad dal 1/2 cup masoor dal 1 tsp fenugreek seeds 2 green chillies 1 inch ginger Handful coriander leaves Salt, to taste Water, as required  Instructions -  Add quinoa, oats, chana dal, urad dal, masoor dal, fenugreek seeds in a bowl and rinse it well. We've covered chutneys, dosa and now it's time for another favourite South Indian breakfast dish - Idlis.

Like dosas, these are usually a two day process, but here's my Instant go-to version that's healthier and ready in minutes. Because of the oats these Idlis are a little denser than ordinary rice and lentil idlis, but so so tasty!

1 cup oats
1/2 tsp mustard seeds
5-6 curry leaves
1 green chilli
1 tbsp oil
1 cup semolina 
1/2 tsp turmeric
1/2 carrot
2 tbsp green peas
1.5 tbsp yoghurt
1/2 tsp baking powder 
Water, as required
Salt, to taste
