A few tips before beginning: 
I made two batches of rice, one was Jasmin rice the other was a rice pilaf (uncle Ben’s). I ended up using the pilaf one cause they were more separate. For best results cook rice at a one-to-one ratio.
You can control the amount of heat you like, so if you have little ones, put less chili paste. Nut allergies? skip the peanuts, you can add toasted sesame seeds instead. 

Ingredients for crispy rice: 
•2 cups of white raw rice cooked and cooled 
•1 heaping tbsp. chili paste 
•3 tbsp. Oil 
Ingredients for salad:
•4 Persian cucumbers 
•1/2 bunch fresh mint 
•1/2 bunch fresh cilantro 
•about 5 scallions 
•1 cup shelled edamame 
•1 avocado 
Ingredients for dressing:
•1/4 cup soy sauce

INGREDIENTS
For the salad
1 large baby gem / sweet gem lettuce, leaves left whole
4 baby / 2 cucumbers, thinly sliced
8 radishes, thinly sliced
1 large spring / continental salad onion (scallion), thinly sliced
1 large, ripe avocado, halved and thinly sliced
50g walnuts, roughly chopped
1 tsp toasted sesame seeds
1 tsp black sesame seeds
salads or 6-8 people)

For the dressing (makes a nice BIG BATCH (for 1-2
90ml (6tbsp) extra virgin olive oil
45ml (3 tosp) tahini
45ml (3tbsp) fresh lemon juice
1 tsp white wine vinegar
2 tsp Dijon mustard
1 tosp runny honey (or agave syrup)
1 tsp freshly grated garlic
1 tsp sea salt flakes
1 tsp dried mint

METHOD
Add all of the salad ingredients to a large platter.
