INGREDIENTS - 2 teaspoon neutral oil - 2 large eggs - 1 cup (185g) warm, cooked white rice, short or medium-grain - 1 tablespoon soy sauce - 2 ½ teaspoons toasted sesame oil - 35-40g (a little less than half) avocado, sliced thin, crosswise - 3g seasoned gim shreds, to garnish - avocado - seasoned gim (seaweed) - kimchi INSTRUCTIONS 1. In an 8-inch non-stick skillet, heat oil until shimmering over medium-high heat. Add eggs and scramble until cooked through and tender (do not make crispy, should be soft and not browned), about 1 minut

@amberiscooking on Instagram: "confit egg yolks! 🍳 served ‘Cacio e Pepe’ style, on a crusty baguette! 2-3 egg yolks @happyeggcousa 1 cup olive oil (or enough to cover the yolks in the container you are using) Optional additives- A few peppercorns Fresh thyme or rosemary lemon zest Cover and Bake at 200 degrees F for about 30-40 min (check them on the earlier side since some ovens run a bit hotter!) To serve, spread on a crostini, top with flakey sea salt, grated Parmesan and lots of cracked pepper! If you wanna take it a step further, add some cooked lardons or bacon for a carbonara flavor!!"
