I'm a big fan of spinach, and I love Mexican food. My kids don't care for spinach, but they devour these enchiladas. It's a great way to get some veggies into my crew. They taste amazing; they are full of ricotta cheese and spinach covered in enchilada sauce, with lots of montery jack cheese over the top. I could eat these enchiladas on a weekly basis. They are quick and easy to make, have limited ingredients, are budget-friendly, and are a family favoriteare a family favorite in our home.
