* Season a chuck roast and short ribs heavily with salt
* Sear in a dutch oven over high to get a crust on all sides and then remove 
* Sauté 1 onion until it becomes translucent and then add in  5 cloves of garlic and 1 can chipotle in adobo and cook for 2 minutes
* Add in 28oz diced tomatoes, 1 quart of beef broth, 1 quart of water and then 3 guajillo peppers, 5 arbol chilis, 3 ancho chilis
* Season with 1 tsp of paprika, cloves, coriander, oregano, 2 cinnamon sticks, 2 tsp of salt, and 2 bay leaves 
* Once the chilis are soft, use an immersion blender to blend it till smooth (remove cinnamon and bay leaves)
