Here is a list of the most important things that aren't lost after death and which can be carried over to subsequent attempts:

1) Talents from the Mirror of Night - this is the main category related to transferring permanent progress in the game. Talents guarantee a variety of skills and stat bonuses. They can, for example, let you respawn after death, lengthen the health bar, allow you to use more bloodstones or increase the strength of selected types of attacks.
